Lactose – milk sugar – is manufactured from fresh whey by evaporation and crystallisation. This edible grade lactose is a very pale yellow, crystallised powder with a slightly sweet taste and typical smell.
Lactose is used as a carrier in savoury dry mixes, and as a component in confectionery, caramels and coatings. In baked products, lactose provides flavour, and browning (Maillard reaction). Lactose is often found as an ingredient in infant formula. It has good compactability and hence is used in pill manufacture as a filler.
Storage and Shelf Life
Lactose should be stored in cool, dry conditions. Bags and big bags should remain sealed.
Under these conditions, the shelf life is 3 years.
Country of Origin
Lactose is delivered in 25kg multilayer paper bags with an inner polyethylene bag, or 1000kg Big Bags.
The multilayer bags are made up as follows:
1st layer: white paper, 70g
2nd layer: kraft paper, 65g
3rd layer: kraft paper, 65g
4th layer: kraft paper, 65g
5th layer: PE liner, 35g
