These flakes are roller drum dried from mango puree. They are typically 8-10mm long, and light yellow to white. They have a typical sweet flavour. Variation in appearance, fruit content and taste may occur, due to the natural origin of the ingredients.
Mango flakes are used have a number of applications, such as snack pots, cake mixes, muffins, tray bakes and cereals. The flakes can be rehydrated by stirring with liquid, to produce a pulpy to liquid product, depending on the amount of added liquid.
Storage and Shelf Life
When stored in cool, dry conditions, mango flakes have a shelf life of 6 months.
